With a combined xxx years of experience in the restaurant industry  and a desire to diversity and create experiences Bryan recognized a unique opportunity and together he and his wife Celina reached out to brother Chris who was residing in Colorado to explore the options.  Ultimately they decided WHY NOT  and started planning for the new venture.  

FROM COCONUT DRIVE TO BRAHMA BLUE to Stella's Sunset 1 Mile North

Coconut Cafe was first located on Coconut Drive, across from Ramon’s Village and instantly became an island favorite. In 2015, Timm and Donna moved to the beach at Exotic Caye Beach Resort.  In the summer of 2018, the Coconut Cafe found its home at Brahma Blue Resort, growing into a full service restaurant, offering a bar, resort services and unique, memorable events and experiences. 

​Purchased in 2020 by Bryan, Celina and Chris from the Midwest the restaurant closed for 6 months  with it's grand re-opening and new ownership in Nov 2025 adding in private chef services, catering and events! 

With a desire to expand private chef service and upscale the dining experience Coconut Cafe became Coconuts Cuisine and Catering AND Cohune Restaurant in June of 2025 now located 1 mile North at the Stella's Sunset location. While the quick ferry across the lagoon was a unique experience patrons can now visit us with ease and on their own schedule.
